Description

Avocados, mushrooms, and a Mediterranean vegetable combo over Jasberry rice and wild blueberries (both high in anthocyanins, an antioxidant), accented with anchovies (high in B12, D, omega-3 and protein) and brocolli sprouts (a superb sorce of sulforaphane, another antioxidant), topped with EVOO which is high in polyphenols (yet another antioxidant!). If that’s not enough, the avocados, mushrooms and veg mentioned also have antioxidants. Seasoned with natural spices.

Ingredients

#1: Whole Foods 365 Organic Mediterranean Blend (zucchini, yellow squash, carrots, green beans, red peppers, onions).

#2: Whole Foods Market Organic Mixed Mushrooms (white, crimini, portobello, shiitake).

#3: Pitaya Organic Frozen Avocado Bite-Sized Pieces.

#4: Jasberry Organic Superfood Rice Original (microwavable/precooked package).

#5: Whole Foods 365 Frozen Organic Wild Blueberries.

#6: Patagonia Provisions Roasted Garlic White Anchovies In Extra-Virgin Olive Oil (canned 4.2oz/120g).

#7: Fullei Fresh refrigerated organic hydroponically-grown broccoli sprouts.

#8: Bragg Organic Sprinkle 24 Herbs & Spices Salt-Free Seasoning Blend.

Steps

  1. Add a serving each of ingredients #1-3 into a microwave-safe plate.
  2. Microwave on high for 2-3 minutes.
  3. Empty a packet of ingredients #4-5 into the plate.
  4. Microwave on high for 2-2.5 minutes.
  5. Empty the can of ingredient #6 into the plate.
  6. Add 1.5 oz of broccoli sprouts (i.e. half a box of ingredient #7).
  7. Sprinkle ingredient #8 generously.

How to eat

Use a fork (and optionally a knife). Ideally combine multiple ingredients per bite. Pair with water or healthy beverage of choice.
